Keto Chia Pudding is a creamy, delicious and healthy pudding made from chia seeds, coconut milk or almond milk, vanilla extract, and a natural sweetener such as stevia or monk fruit sweetener. It is a low-carb, high-fat and high-protein snack which can be enjoyed as a breakfast, dessert or snack. The pudding is typically made by mixing the chia seeds and milk together and allowing it to sit in the fridge overnight to thicken, then topped with berries, nuts or other toppings for added flavor and texture.

INGREDIENTS

  • 4 tbsp chia seeds
  • 1 tbsp monk fruit sweetener (can sub swerve) 
  • 1 tsp sugar-free vanilla extract 
  • 3/4 cup full-fat coconut milk (from a can) 
  • 1/4 cup water

INSTRUCTION

  1. Add all the ingredients to a bowl and whisk them together for about 60 seconds. You should notice the mixture start to thicken slightly. 
  2. Place the bowl covered in the fridge for at least one hour, or overnight. 
  3. Remove from the fridge and give it another stir. If the pudding is too thick, add a little splash of coconut milk. 
  4. Serve on its own or topped with a dollop of plain yogurt and a few berries
  5. Enjoy
