To make the salad, you start by boiling eggs until they are hard-boiled, then peel and chop them into bite-size pieces. Next, halve and pit an avocado, then scoop out the flesh and chop it into small chunks. Cook some bacon until it is crispy and chop it into small pieces. Mix the eggs, avocado, and bacon in a large bowl, then add fresh herbs, such as parsley or cilantro, for a burst of flavor. Finally, season the salad with salt, pepper, and a squeeze of fresh lemon juice, and enjoy! This salad is not only tasty but also loaded with healthy fats and protein, making it a perfect option for a light lunch or snack.
INGREDIENTS
- 1-3 avocados chopped
- 3 boiled eggs
- 1 tablespoon lime juice
- 2 tablespoon olive oil
- salt and pepper to taste
- cilantro is an optional topping
INSTRUCTIONS
- Combine all ingredients in a large bowl and toss well to coat and mash up the avocados a bit.
- you can Store in an airtight container in the fridge. and eat it later.
NOTE
I used 3 avocados in this recipe but if you want them more for creaminess, just use one. The nutrition facts are calculated with two avocados.
