INGREDIENTS
- 1/2 cup (or 8 tablespoons) coconut flour
- 2 tablespoon confectioners swerve
- 1/4 teaspoon sea salt
- 1 teaspoon baking powder
- 3 large eggs, room temperature
- 1/4 teaspoon vanilla extract
INSTRUCTIONS
- To start, gather all of the ingredients in one place.
- Next, crack the eggs into a bowl. Then add all the dry ingredients into a separate large bowl, and mix.
- Next, add the other wet ingredients into the bowl which contains the eggs and mix until well combined.
- Pour the wet ingredients into the dry ingredients then mix until well combined. This mixture should form a thick coconut flour pancake batter.
- To make the pancakes, heat up a non stick skillet on medium heat. For each pancake, add 3 tablespoons of pancake batter, and cook for 1 minute on each side.
- Continue this process until all the pancakes are cooked, then serve these flapjacks warm with your favorite keto pancake toppings.
